Here we stir cocoa powder into a classic waffle batter to yield rich, chocolaty waffles. Topped with homemade whipped cream and fresh strawberry slices, this decadent brunch could even pass as dessert.
Whisk flour, cocoa, granulated sugar, baking powder, baking soda and salt in a large bowl. Whisk egg, milk, oil and vanilla in a medium bowl. Add the wet ingredients to the dry ingredients and whisk until just combined. Let stand for 10 minutes.
Preheat a waffle iron to medium-high.
Meanwhile, beat cream and maple syrup with an electric mixer in a large bowl until soft peaks form, about 3 minutes.
Coat waffle iron with cooking spray. Add 1/2 cup batter and cook according to manufacturer's directions. Repeat with the remaining batter. Serve the waffles topped with the whipped cream and strawberries. Garnish with confectioners' sugar, if desired.
